Vine-ripened tomatoes basking in the sun, ready to be picked. These tomatoes were growing in a pot on our patio. (They since have been turned into a wonderful tomato salad!!!)

Every year when I was growing up, as I recall usually in late August or early September, my mother and her sisters would get together “up the Hill” to “do the tomatoes”. They would use mostly plum tomatoes harvested from my Uncle’s very large and beautiful garden, supplemented with bushels of tomatoes purchased at the market in Paterson, NJ. Sometimes we would help slice up the tomatoes and throw them in a big stainless steel vat that sat on top of an old gas stove in my Grandfather’s basement. The only things I remember them adding to the tomatoes were sprigs of freshly-picked basil, also from my Uncle's garden.

The incomparable aroma of the tomatoes and basil bubbling away and cooking down in preparation for bottling pervaded the entire neighborhood, and remains to this day one of my most vivid and treasured memories.
