A Christmas Eve tradition in my family … My mother’s baccalà salad was legendary, and eagerly anticipated every year. When she went to her eternal reward I knew we needed to keep the tradition alive, so I began making it. Dried salt cod, soaked for three days, then prepared with celery, olives, hot cherry peppers, parsley and garlic, dressed with extra virgin olive oil and lemon and a dash of oregano. So good, served at room temperature and accompanied by fresh bread and a bottle of my brother’s homemade Moscato!
